Tried it and found it exellent.
Too bad it’s not all that available. Only one store in the area even carries it, and the cost is just stupid.

Great idea. Just don’t turn bison meat into “beef” by finishing the animals with grain, soy, etc. the way cattle are fed. Range fed bison will have a higher omega-3 level and a lower omega-6 level. Also your South Dakota pasture produces grass high in selenium and other minerals which will make for a healthy meat.
