Growing up with a Hungarian mother, stuffed peppers were a favorite in our home. This casserole is an excellent vegetarian option, easy to make and delicious using fresh tomatoes and peppers from my garden. Wonderful as leftovers. I didn’t have enough sour cream, so I added a little cottage cheese to equal 1/2 cup. Didn’t have enough brown rice so I used brown Basmati rice instead. Many times I have handled jalapenos with my bare hands, but never again. Tip to readers: wear gloves! Thanks Sue for another delicious recipe!
