I know the feeling… I started my own sourdough after scouring the internet for directions. I worried and fussed over it for days until it took off, but through trial and error realized it’s actually kind of hard to kill! I keep some in the fridge and feed it with flour and water when I remember, and it’s always come right back to life when I bring it out to double it.
I was told it’s customary to name your starter. Mine is “Drop Bread Fred”.
