Let’s salsa!

Salsa is synonymous with summertime.
It makes the perfect light snack on a hot July day. And it helps use up the bounty of fresh tomatoes and peppers in our gardens.

The picture looks great. Almost the same as in Tijuana, they chop it up the same and use white onions though it will taste better, go easy on the onions, fresh lime at least two and the Cilantro fresh leaves, roma tomatoes. You can use your blender, just don’t overdo it, cut the onions tomatoes first and just hit the button and off, sea salt, don’t make a mush out it, and it won’t be the same. Make small batches so you get it right. If you like it spicy, grill Jalapeño peppers right on your oven top heaters, put it on med and rotate them, cut them up too, when your cut them make sure to wear gloves and wash your hands or you could be in serious pain if you rub your eyes or worse for men, ha ha, this has never happened to me.

Getting tired of someone dissing me. There is nothing in both of these articles that requires a negative or thumbs down. If you don’t stop it I will report you, I am sure they can look up who is doing this. I had many folks dog on me and I am letting you know right now, your dogging me and you will get reported. You are supposed to read the rules before you get on this board, I suggest you re-read them. Nothing said here is negative, I just gave two great reciepe’s and if you have a better one at least share it, if not quit doggin me.

Spanish fried rice: Most people have no clue how to make this, I now do, I found out by a Mexican while in a drunken stupor in Tijuana, Mexico. Basically you put a healthy amount of oil, peanut oil would be best in a non stick large pan and fry the dry rice for a while at least 15-20 minutes on medium high, also add a half of a red bell pepper and towards the end add garlic, you can buy it at the Asian store on main by McDee’s and it roasted and dried, perfect in huge containers, add sea salt and one can of tomato past or a regular can of tomato sauce and then water and cover once it starts boiling and then turn down to low, you might have to add more water as it goes, it ends up 50-50 water and sauce with the rice.
